Bucatini Puttanesca
What is Bucatini, well simply it is a long noodle with a hole in the middle that will hold sauce for extra deliciousness. Yes you can use spaghetti, but I urge you to not skimp and try this out. Here is the recipe for this one pot wonder. Enjoy!
Ingredients:
- 1/4 C. extra virgin olive oil
 - 6 minced garlic cloves
 - 4 anchovy fillets
 - 1 1/2 tsp dried oregano
 - 3/4 tsp crushed red pepper
 - 4 C. chicken stock
 - 12 ounces bucatini or thick spaghetti
 - 3 pints tomatoes, halved (cherry or grape)
 - 2 TBS tomato paste
 - 1/4 C. chopped fresh basil
 - 1/4 C. chopped fresh parsley
 - 24 pitted and chopped kalamata olives
 - 3 TBS capers
 - 1/8 tsp salt
 

Prep
Heat a large sauté pan over medium heat. Add oil to pan and coat. Add garlic, anchovies, oregano, and red pepper. cook approx 2 minutes stirring constantly breaking up anchovies. Add  the stock and pasta to pan, bring to a boil. Cook approx. 10 minutes, stirring occasionally. Add tomatoes and tomato paste. Cook approx. 2 to 3 minutes or until pasta is done.
