
2-3 very ripe medium bananas peeled
1/3 cup melted butter (salted or unsalted)
1/2 teaspoon baking soda
1 pinch salt
3/4 cup sugar, can substitute half with light brown sugar
1 large egg, beaten
1 teaspoon vanilla extract
1 1/2 cup all purpose flour
Mix bananas and melted butter until smooth. Add remaining ingredients and blend together to make
the dough. Pour in a 8 x 4″ loaf pan. Place in pre-heated oven and bake for 47-57 minutes. check with
toothpick in center. should come out clean.
You can add your favorite nuts to this recipe, some cinnamon, or top with chocolate chips. Will store
wrapped at room temperature for 4 days. Also great for freezing.
