
Crockpots are so easy, just put in ingredients, turn on and go, when your day is over you come home to a dinner already cooked, now how convenient is that. A different version of a whole chicken I like to make is chicken verde, the meat is so tender and moist that the whole chicken just falls apart and tonight I am making some quinoa in the rice cooker to go along with it. A little different twist on a typical chicken and rice dinner.
Ingredients
- Whole chicken
- bottle of salsa verde
- chicken broth
- quinoa
- fresh spinach
- salt and pepper
Rinse whole chicken and remove gizzards from inside, placing them in a separate pot of water to boil and use later. Place entire chicken whole into crockpot, fill till almost covered with water or chicken broth, cover and turn to low if your cooking all day.
When chicken is done, grab your rice cooker or if you don’t have one a pot, put equal parts quinoa to water. cook until water is evaporated. Bring to a boil your chicken gizzards and cook on low until done. Usually about the same amount of time as your quinoa takes.
Remove gizzards from water. Take a large spoonful of salsa verde sauce in crockpot and pour into cooked quinoa, slice up the gizzards and chop up fresh spinach, as much as your desire, put spinach and gizzards into quinoa, salt and pepper to taste.
Plate your quinoa and top with a piece of juicy chicken verde. Walla, a simple and great tasting dinner that everyone will love.
