Ribeye and corn on cob

Place a pot of water on stove and bring to a boil.  Peel the corn removing all the hair as well, toss this, do not put down garbage disposal unless you want to spend your night trying to unclog it.  Once water is boiled place corn on cob in and boil for approximately 8-10 minutes, or until a nice golden color and heated thru.

Tonight was just my son and I at home, pretty hot outside here in Las Vegas and the perfect time to BBQ one of my favorites, STEAK.  I do have to admit I am a bit of a carnivore, so hitting the grocery store figured why not splurge on a Ribeye cut and corn on the cob is always a summer must, right?

This Ribeye was a thin cut.  Usually I go for the thicker cuts, but I am trying to cut down on portion size, lol. If its in front of me, I will eat the entire thing, then chomp on the bone which holds soooo much flavor. Over all this meal took probably 10 minutes.

Ingredients

  • Ribeye cut beef
  • corn on the cob

Take the beef out of refrigerator to let sit for about 10 minutes prior to cooking.  The idea is to get the meat to room temperature or close to it, allowing the meat to relax, especially the marbling that makes this cut of meat so delicious.

Rinse off in cool water and pat dry, then let rest.

Pre-heat BBQ.  Always pre-heat BBQ, this helps prevents meat sticking to grate and seals the outside of the meat quickly to retain all the juices. We don’t want to dry out our Ribeye.

Lightly salt and pepper both sides of your steak.  I use sea salt and cracked pepper always.  Place on grill, medium heat.  These were thin cut so I left the lid up as these will cook fast,  I wanted a nice sear on outside, while leaving inside rare. Only took about 2 minutes per side.

Again once removing from the grill, let the meat rest for about 5 minutes to allow juices to settle.  Meat will still continue to cook once removed, so be sure not to over do it while on the BBQ.

Remove corn from boiling water, pat dry, then spread butter, lightly salt and pepper. Plate your Ribeye and corn and enjoy.

Cooking time approx. 10 minutes. What a delicious, easy and fast dinner that screams summer time.  Happy grilling.
